Cake Mix Cookies

There’s something about a relaxing Sunday at home that makes me want to bake! I was supposed to have a photo shoot in the mountains today, but due to 50mph wind gusts, my client and I decided to postpone it for 2 weeks. So I found myself with a free afternoon!

Due to an unfortunate incident involving an egg and my new hardwood floors yesterday morning while making waffles, I found myself down to only 1 egg to bake with today. So I had to get a little bit creative. That’s a scary thing considering I’m pretty terrible at baking. I’m a good cook, that I know. But baking….we’ll, my talents lie elsewhere.

I had some spice cake mix that I needed to use up and since I didn’t have enough eggs to make it into a cake, I decided to go for cookies instead. They turned out so well!

1 box of cake mix (any flavor will do!)
1/2 cup butter
1 egg
6oz (or about 2/3 of a package) of cream cheese
1tsp vanilla
1/4 cup milk

1. Preheat oven to 350 degrees
2. Cream together softened butter, cream cheese, egg, milk and vanilla
3. Add in cake mix and mix together well
4. Roll 1 inch balls of dough and drop onto cookie sheet (I rolled mine in sugar first, because let’s be honest…more sugar=more yumminess)
5. Bake for 10-13 minutes

The result is a moist, cakey cookie. Mmmmm! =)
